Pairing Aperitifs, fish, shellfish
Refined and vibrant, this Blanc de Noirs Champagne immediately reveals a coherent, well-defined profile: on the nose there are ripe small red fruits, a hint of shortcrust pastry and slightly toasted notes that add dimensionality. The bubbles are fine, the perlage provides a discreet creaminess and supports a sip that is more taut than soft, where freshness intertwines with a pleasant sapidity. It is not overpowering, but shows a substance that allows its concreteness to be appreciated at every stage of the tasting. Balance and linearity make it enjoyable in the glass.

On the palate it is savory and direct, with an agile mid-palate and a progression that maintains tension without losing suppleness; the finish is clean and persistent. It pairs well with delicate seafood dishes, steamed shellfish and raw fish preparations, but also stands up to flavorful appetizers and fresh cheeses. Also excellent as an aperitif for convivial occasions; ideal serving temperature around 8–10 °C. Serve very cold to highlight its drinkability and enjoy the balance between structure and lightness.
