Amarone typically offers a full structure, with aromas of ripe fruit, earthy notes and pronounced tannins, while Ripasso tends to be more dynamic, with red fruit, good tension and a balanced body. Both wines pair well with meat dishes, matured cured meats and structured cheeses; Ripasso is also versatile with flavorful first courses. It is recommended to serve the wines at appropriate temperatures and to consider decanting the Amarone if one wishes to temper its olfactory opening; however, the choice of temperature and serving technique remains at the consumer's discretion.
