The Crémant de Bourgogne Blanc de Noirs - Laurent Cognard & Co represents an excellent expression of the traditional method outside the Champagne region. Produced exclusively from Pinot Noir grapes, these are carefully selected from the best vineyards in Burgundy managed by the Cognard family, known for their commitment to respecting traditions and using sustainable viticulture practices.

With maturation of at least 18 months on the lees in the bottle before disgorgement, this crémant presents in the glass with a pale and sparkling red color, accompanied by fine and persistent bubbles that indicate its excellent quality and careful production.

On the nose, Laurent Cognard & Co offers a complex aromatic range where notes of red fruits like strawberry and cherry stand out, enriched by nuances of brioche and yeasts that testify to its evolution through bottle fermentation. The olfactory approach is inviting and sophisticated, a sign of the quality of the grapes and the mastery in the winemaking process.

On the palate, the wine reveals itself to be structured yet elegant, with a perfect balance between acidic freshness and the creaminess imparted by prolonged contact with the lees. Winery history
The Cognard family originates from the Mâconnais. Laurent acquired his first vineyards in 1997 and became a full-time winemaker in 2006. The estate later moved into the premises of Château de Buxy, where a cellar and tasting room were created to support the estate’s development.
Production philosophy
Production focused on freshness and balance: protecting grape quality, soil cultivation by hoeing to encourage deeper root systems, reduced phytosanitary treatments with a shift toward the Terra Vitis/HVE standard, and aging in larger-format barrels to showcase the minerality of the whites.
