Elegant and dry, this Crémant de Limoux shows fine, lively bubbles that support a fragrant yet restrained profile. On the nose there are sensations of green apple, citron and white flowers, accompanied by a hint of bread crust and yeast that adds depth without weighing it down. The Brut Nature style is immediately apparent: no residual sweetness, only freshness and a crisp, nervy acidity that keep the sip clean and direct.

On the palate it is slender, with good salinity that supports the finish and invites the next sip; the body is medium, balanced by vivacity and a pleasant lingering citrus persistence. Versatile at the table, it is excellent to open with seafood starters, oysters and shellfish, but also holds up well with raw fish dishes or fresh cheeses. Serve chilled, in a flute or a large wine glass, to appreciate its texture and persistence.
