Franciacorta Extra Brut Il Canto delle Cicale presents a clear, restrained expression: fine bubbles, an elegant perlage and a vibrant freshness that supports the sip without weighing it down. On the nose delicate notes of white flowers and bread crust emerge, with a mineral hint and traces of white-fleshed fruit that always remain subtle; on the palate the acidity is well balanced, the structure dry and savory, the finish dry and pleasantly persistent. Overall the wine shows balance and precision more than breadth, ideal for those seeking a dry, gastronomic style.

It suits the aperitif with light seafood preparations, raw seafood dishes and oysters, but also holds up to fish-based first courses and delicate main courses; it is surprising with fresh or blue cheeses that are not overly salty. Serve chilled, in a flute or a not-too-wide coupe, to appreciate the texture of the bubbles; it is a versatile choice for a menu that calls for freshness and sapidity without excess.

A winery perched on Casaglio Hill, in the heart of eastern Franciacorta. Production focused on Franciacorta DOCG with extended maturation on the lees. Family-run management with a strong emphasis on women's involvement in hospitality and production. Estate-owned hillside vineyards with favourable exposures between Gussago and Cellatica. The range includes Satèn, Brut, Rosé, Nature and reserve wines, as well as local red wines.
Winery history
The winery was founded and has grown as a family-run business led by the Bontempi family. The name Le Cantorie comes from the local dialect and evokes the song of the cicadas that enlivens the hillside. Over generations the estate has converted and outfitted its historic spaces, combining local heritage with modern production interventions and techniques.
Production philosophy
The estate declares a strong connection to the territory: it cultivates only estate-owned hillside vineyards, prioritizes quality in the vineyard and applies cellar practices aimed at enhancing the expression of the terroir. For its Franciacorta it favors long aging periods and the use of the traditional method; at the same time it highlights local red wines through reserves and selections.
Terroir and vineyards
The vineyards are located on terraced slopes between Gussago and Cellatica, in eastern Franciacorta: calcareous-clay soils, a marked diurnal temperature range, predominantly south-facing exposure and constant ventilation characterize the area and influence both the base wines for sparkling production and local reds such as Cellatica.
