Distilled by the renowned Hayman's Distillery, which has carried on its distilling heritage since 1863, this version stands out for its unique richness derived both from the quality of the gin base and the sloe berries used.

After distillation, the gin is infused with sloe berries picked at their seasonal peak. This process takes several months, during which the gin absorbs all the flavorful juices of the sloe berries, resulting in a liquor with a deep ruby red color. The maceration process is carefully controlled to balance the gin's briskness with the natural sweetness and slightly astringent notes of the sloe.

Distillation

Distillation in copper pot stills with a two-day process: maceration of the botanicals followed by distillation; use of multiple pot stills of different capacities for the various productions.

Ageing

Generally no ageing required for London Dry and Old Tom (Old Tom is richer with a slight sweetness); for Sloe Gin the fruit is macerated for several months before bottling.
