On the palate it shows a measured balance between roundness and alcoholic vigour, with a warm touch that supports without weighing it down; the finish is dry and savory, with good persistence, suitable both for mixing and for a well-made gin and tonic. It’s versatile in aromatic cocktails and retains personality even in more complex mixes, making it ideal for a refined aperitif. Best served chilled in a tumbler or copa glass with a citrus garnish to enhance freshness; pairs well with seafood starters, crustacean dishes, or simple Mediterranean snacks.

Distillation
Copper pot still distillation with plant including a gin still, wash and spirit stills; 'grain-to-glass' process for single malt whisky and botanical distillation for the gins. The new plant was installed with copper stills and equipment for mashing/fermentation.
Ageing
Maturation in oak casks using different types of barrels depending on the expression: ex-bourbon, ex-sherry (Oloroso, PX), Scottish oak casks and finishes in selected casks for some limited editions.
