The Graacher Domprobst Riesling Kabinett by Willi Schaefer represents one of the finest expressions of Riesling from the renowned Mosel region in Germany. This wine is a perfect example of the Kabinett variety, known for its delicate balance between natural sweetness and vibrant acidity.

Produced from vineyards located in the specific area of Graach, the Graacher Domprobst Riesling Kabinett benefits from an exceptional terroir characterized by blue and gray slate soils, which impart a distinctive and complex minerality to the wine. Aging in old oak barrels allows the wine to develop finesse and structure while maintaining the freshness and natural fruitiness of the Riesling.

On the nose, the wine offers an intricate bouquet of floral aromas, with notes of green apple, white peach, and subtle hints of aromatic herbs. On the palate, it is elegantly light but intensely flavorful, with sweetness balanced by fresh acidity. The entry is smooth, followed by a mid-palate that bursts with flavors of white-fleshed fruit and a long, persistent finish with a lingering aftertaste that echoes its mineral origin.

Ideal both as an aperitif and when paired with delicate dishes, the Graacher Domprobst Riesling Kabinett is particularly well-suited with seafood, lightly spiced Asian dishes, or as an accompaniment to fresh cheeses and fruit-based desserts.

With its elegant label and distinct taste profile, this wine not only enriches a private collection but also serves magnificently as a gift for enthusiasts of sophisticated white wines.

Discover the story and wines of Willi Schaefer.

Small family-run estate in the Mosel (Graach) specialising exclusively in Riesling, with vineyards in the Graacher Domprobst, Graacher Himmelreich and Wehlener Sonnenuhr cru sites.
Region: Mosel (Mittelmosel)
Country: Germania
Grapes: Riesling
Exclusive production of Riesling from estate-owned vineyards. Vineyards from the Graacher Domprobst, Graacher Himmelreich and Wehlener Sonnenuhr crus. Family-run estate currently managed by Christoph and Andrea Schaefer. Steep vineyards on slate soil with many fragmented parcels. Traditional aging in large foudres and selective hand-harvesting.
Winery history
The Schaefer family has been recorded as winegrowers for centuries. In recent years Christoph and Andrea Schaefer have taken over management; Christoph joined the estate in 2002 and Willi handed over management to his son in 2015. The estate has developed as a small family project focused on the great sites of the Moselle.
Production philosophy
Strong focus on terroir-driven Riesling: all grapes vinified come from the estate's own vineyards. The approach favors selective hand harvesting on steep Devonian slate exposures, low yields and careful cellar work, with aging in traditional barrels to preserve the fruit's finesse and clarity.
Terroir and vineyards
Located in Graach, the estate manages steep, south-southwest-facing vineyards on slate and clay soils. The parcels are divided into numerous plots within the historic crus of Graacher Domprobst, Graacher Himmelreich and the nearby Wehlener Sonnenuhr.
