Distillation

Copper pot stills operating in batch mode at low pressure; bain-marie/vacuum low-temperature distillation for aromatic grape spirits.

Ageing

Maturation in wooden casks and barriques for the reserves; young grappas are briefly rested in inert containers (stainless steel) before bottling. Some reserves are aged for long periods (e.g. Baronne 20 years).
