Distillation
Controlled fermentation in stainless steel (under vacuum) followed by discontinuous steam distillation in copper pot stills; slow process with selection of cuts (heads/tails) to preserve aromas.
Ageing
Prolonged ageing in wooden casks (Slavonian oak) and in barriques; some Gran Riserva expressions mature for 10, 20 or 30 years.
