The harvest of this vine, which has an age between 10-20 years, is done at the beginning of the third week of September, manually. This is followed by the white vinification and soft pressing of the grapes with a maximum extraction of 60% of free-run must. The fermentation takes place in steel barrels and then the refinement for 4/5 months. The bottling takes place in several stages, from February to September of the year following the harvest, while the placing on the market takes place after 2/3 months of rest in the bottle.

In the glass it has a bright straw yellow color. It has a particularly complex and refined bouquet. At the first sip, it immediately stands out for its body and gustatory persistence, an exceptional white in combination with fish-based dishes, white meats and appetizers. Also excellent as an aperitif. Due to its strong personality it does not harmonize with sweet foods.

The union between soil and microclimate in which this vine is produced creates a wine celebrated since Roman times for its pleasantness and uniqueness that you just have to discover.

Winery history
The name and estate have deep historical roots in the area; documents and research record references to the use of the land as early as the 15th century, while the transition into a modern winery took place between the 19th and 20th centuries. Today the family-run operation has preserved its historical identity while integrating more recent production techniques.
