On the palate it surprises with the cleanliness of the sip and the roundness that envelops the alcoholic warmth; the structure is compact, with a salinity that supports the drink and a gently caressing persistence where the smoke resurfaces and a slightly peppery return. It lends itself to a slow tasting, preferably at room temperature and not too cold, to appreciate its aromatic depth. Excellent paired with grilled dishes, savory fish preparations or aged cheeses that match its salinity; a few drops of water or a sip of sparkling water can open up further nuances without altering its essence.

Distillation
Double distillation in traditional stills (copper/various types) for the artisanal expressions; some bottles are produced with ancestral methods (olla de barro).
