Novebolle Spumante Brut DOC di Austo greets with lively bubbles and a fresh but measured aromatic presence: ripe citrus, green apple and white flowers combine with light herbal notes that make the profile immediate and pleasant. On the palate there is a balance centered on dryness and bright acidity, with restrained body and a pleasant sapidity that supports the drink without weighing it down; the finish is clean, with citrus returns that invite the next sip. The structure is designed for easy drinking, elegant without excess.

It naturally lends itself to aperitivo, but retains excellent gastronomic qualities: raw fish, shellfish, fresh starters and soft cheeses find balanced pairings; it can also be used with light seafood first courses or to lift fried preparations that aren’t too greasy. Serve well chilled in a tulip glass to appreciate the fineness of the bubbles; ideal for informal toasts, summer lunches and whenever you’re looking for a versatile, unpretentious sparkling wine.

Winery history
The Sutto Family has a winemaking tradition dating back to 1933, passed down through three generations. From the management of the vineyards at Campo di Pietra, several businesses and brands have developed — Sutto, Batìso for Prosecco and Polje for Collio — along with hospitality and restaurant activities.
