The olives come from cultivations in Basilicata and Puglia, with mechanical and manual harvesting methods. A production plant with reduced oxidative impact to best preserve all the properties of the oil pressed from freshly harvested olives. The working group carefully checks starting from the degree of maturation, the concentration of water and the other qualities that you want to find in the finished product.
At the end of the extraction, the oil is filtered on cellulose panels to eliminate 99% of the water present; the final oil is stored in stainless steel tanks at a controlled temperature, protected from light. Even the bottling takes place in a protected atmosphere, in dark glass bottles that protect up to 97% from UV rays.
You can admire its green color with golden hues. The scent is medium fruity, with aromas of fresh olives and notes of almond and artichoke. Very structured taste, a medium-intense bitterness is perceived, with spicy persistence.
Excellent raw to enrich salads, soups, grilled fish and Florentine steak.
