The "Estivo" Extra Virgin Olive Oil is produced in the Frantoio Avanzi in Manerba del Garda.
An extra virgin olive oil so named on the label, a term used by "Lucio Giunio Moderato Columella" a great agronomist who in the year 54 AD. in one of his treaties he defined the oil obtained from olives harvested early at the end of October as "Summer".
This type of crop choice has a low yield in quantity but the taste is unique. After harvesting the olives are pressed within 24 hours, this allows to obtain an extremely fruity, slightly spicy oil with an almond aftertaste.
The olives harvested slightly in advance have a very low acidity, which makes the oil very suitable for the Mediterranean diet. It is excellent for seasoning salads and seasonal vegetables, and is perfect on bruschetta or to season soups and fish raw.
