Pairing Dessert, blue cheeses
Intense golden with amber highlights, this passito opens on a rich but never cloying aromatic profile: plum and dried apricot combine with honey and candied orange peel, with light hints of dried flowers and sweet spices that make the bouquet complex.

On the palate the sip is enveloping and warm, with a velvety sensation; the sweetness is well balanced by a fresh acidic spine and a subtle sapidity that support its structure, leading to a full and pleasant persistence without becoming excessive. Perfect as a wine for contemplation or to finish a meal with elegance, it pairs gracefully with blue cheeses, pâté and desserts made with dried fruit or cream; it also works with small portions of dark chocolate or with vanilla ice cream for pleasing contrasts. Serve cool but not cold, around 10–12 °C, in a tulip glass: moderate portions allow one to appreciate its richness and balance without overwhelming the palate.
