After the manual harvest, the fermentation is traditional, carried out in tanks; the vinification involves destemming, the use of the whole berry and a pre-fermentation maceration with frequent punching down. The refinement takes place in Burgundy pièces for a period of 12 months.
The aroma is broad, complex and fascinating, with the characteristic ripe red berries of the vine, such as raspberry and strawberry, accompanied by subtle spicy nuances and woody notes.
The flavor imposes itself with a range of aromas that range from well-ripe red fruits to hot spices, from balsamic to aromatic woods. The texture of the wine is silky but dense, with well-integrated acidity and noble tannins, giving a harmonious finish with returns of red fruits and spices.
This wine pairs well with game, red meat and semi-hard or hard cheeses.
