The Pinot Nero Piemonte DOC "Apertura" by Cascina Pastori Colombo is a celebration of the elegance and refinement that Piedmont can express through one of its most noble and delicate grape varieties. This wine is produced from the careful selection of Pinot Nero grapes that grow on the gentle hills of Piedmont, benefiting from an ideal microclimate that gives complexity and depth to the variety.

With its slightly translucent ruby-red color, "Apertura" offers an aromatic bouquet in which harmonious notes of small red fruits, such as raspberries and cherries, blend with floral nuances and a light spicy touch that enchants the nose. It’s an olfactory experience that immediately invites tasting.

On the palate, it presents a soft and silky entry, maintaining a perfect balance between acidity and finely intertwined tannins. The typical freshness of Pinot Nero is enhanced by a good structure and a lingering, savory finish that recalls its land of origin.

Thanks to its elegance and versatility, the Pinot Nero "Apertura" is a wine that can be enjoyed in various gastronomic settings. It pairs beautifully with lightly spiced white meat dishes, pasta with mushroom-based sauces, or sophisticated vegetarian dishes. Additionally, it is an excellent choice for a tasting evening or as a gift for wine lovers who appreciate delicate and complex varieties.

Producer Cascina Pastori Colombo is committed to maintaining a close bond with the territory, enhancing the purity of the fruit through sustainable agricultural practices and careful winemaking that respects the original character of Pinot Nero. "Apertura" is a testament to why Piedmont is considered one of the world's wine sanctuaries.

Winery history
The project is linked to the Colombo family: the estate has been active in the Bubbio area since the early 2000s. Sources indicate that vineyard activity began around 2003/2004 with the purchase of Cascina Pastori; the work has focused on restoring historic vines and on showcasing Pinot Nero, alongside Chardonnay and Moscato. From the early 2010s the project has undertaken technical collaborations with winemaker Riccardo Cotarella for the wines' oenological development.
Production philosophy
The estate prioritizes careful, localized vineyard management, agronomic practices that respect the soil and landscape, and winemaking aimed at showcasing the terroir: meticulous vineyard care, limited production, and the use of the Traditional Method for sparkling wines.
Terroir and vineyards
Val Bormida, in the heart of the Alta Langa of Asti. Marl-limestone soils with marine-origin clays; reported elevations vary by source, but the cited vineyards lie at around 250–350 m above sea level, with an exposure favorable to Pinot Noir and Chardonnay.
