Poli Ruta is a flavored grappa obtained by adding an infusion of "graveolens" rue twigs. An extremely pleasant liqueur both on the nose and on the palate, characterized by fresh aromas and great digestive properties.
It lends itself to the sight of a rather clear golden yellow color with greenish reflections. The nose offers intense floral and vegetable aromas among which hints of tea leaves stand out. In the mouth it releases a particular taste characterized by a stimulating and resinous sweet-bitter contrast, with retro-olfactory notes of fresh vegetables, good aromatic persistence.
Poli Ruta proves to be an excellent label to finish a meal in style.

Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
