Prosecco Tenuta Civranetta Col Fondo di Tenuta Fidora è un vino spumante che rappresenta la tradizione e l'eleganza del territorio veneto. Questo Prosecco è prodotto secondo il metodo ancestrale "col fondo", che prevede una fermentazione naturale sui lieviti, all'interno della stessa bottiglia. Il risultato è un vino non filtrato, sorprendentemente autentico, con particelle in sospensione che aggiungono una profondità e una complessità uniche.

Alla vista, il Prosecco Col Fondo si presenta con un colore giallo paglierino opaco, evidenziato dalla presenza dei lieviti naturali. Al naso, offre un bouquet aromatico delicato e ricco, con note di mela verde, agrumi e una lieve fragranza di fiori bianchi. Emergono anche sfumature di lievito e crosta di pane, dovute alla fermentazione prolungata sui lieviti.

In bocca, questo Prosecco è fresco e vivace, con una spuma fine e persistente. Il sapore è secco, caratterizzato da una piacevole acidità che bilancia perfettamente le note fruttate e minerali. L'effetto complessivo è di grande bevibilità, rendendolo ideale come aperitivo o in accompagnamento a piatti leggeri come insalate, pesce e formaggi freschi.

Winery history
The Fidora family has been established in the area since the early 20th century; the Civranetta estate dates back to the 1920s, while beginning in the 1970s the winery started converting to organic viticulture and abandoned the use of pesticides. In the following decades wine production was expanded with vineyards in Valdobbiadene and Valpolicella, and the family embarked on a path toward biodynamic practices.
Production philosophy
Sustainability-focused production: an organic and biodynamic approach, enhancing soil fertility, biodiversity and circular farming practices. The estate states it has not used chemical pesticides since 1974 and adopts biodynamic preparations and cover crops to promote soil life.
Terroir and vineyards
Veneto region: estates and vineyards located on the Venetian mainland, on the hills of Valdobbiadene and in various areas of Valpolicella. The territory stretches from the Venetian Lagoon to the UNESCO-listed hills of Valdobbiadene and the elevations of Valpolicella.
