Clairin Vaval is produced in small quantities in Cavaillon, in the southern part of Haiti, using ancient methods and local sugarcane, organically grown without the use of pesticides or chemical fertilizers. The distillation takes place in a direct-fire still, thus preserving the rich earthy aromas and fruity notes typical of sugarcane.
