Rhum Rhum Liberation 2024 is made from Rouge B47.259, a rare and ancient variety of sugar cane from the Antilles. The harvest follows traditional rituals: the canes, cut by hand with the typical coutelas, are transported to the distillery on cabrouet carts pulled by oxen. The extracted juice is fermented pure, without any dilution, in open vats at a controlled temperature for 5-6 days. This is followed by nearly a year of resting in stainless steel to gradually reduce its alcohol content, before a long maturation in French oak barrels previously used for France's most prestigious Premier Crus. Served neat, it is an indispensable Pure Single Agricole for any true connoisseur.
