Rhum Liberté 8Y from Barbancourt presents a mature, refined profile that respects the sobriety of its age. On the nose warm notes of vanilla, caramel and dried fruit emerge, supported by light hints of cane sugar and a spicy trace. The palate is enveloping and smooth but well balanced by its structure; the alcohol yields without harshness and gives way to an almost creamy texture, with recalls of citrus marmalade and a touch of bitter cocoa on the finish. The finish is long, with toasted returns that emphasize its persistence.

It is a rum designed for contemplation: excellent neat at room temperature or with a small addition of water to open up its aromas; a not-too-cold temperature is recommended to capture the aromatic profile. It pairs with dark chocolate or dried fruit desserts, and is also suited to after-dinner tasting moments.
