Ca' Stele's Ribolla Gialla displays a fresh, linear profile, a character that favors precision over power. On the nose an interweaving of white flowers and cedar peel emerges, with notes of green apple and a slightly herbaceous trace that doesn't weigh it down. The palate is lively, supported by good acidity that defines the structure without feeling sharp; salinity remains prominent and provides a pleasant cleanliness on the palate. The body is restrained but defined, with a medium-persistent finish that invites the next bite.

It works well as an aperitif wine but finds a natural companion in delicate fish dishes, steamed shellfish and preparations of grilled vegetables; it also pairs with fresh cheeses. Serve chilled, in a not-too-large glass, to keep the fresh notes vivid and the palate tension. It is an example of an understated wine characterized by a clarity that makes it versatile and immediate, suited to those seeking clean, pleasurable drinking.
