The Romagna Sangiovese Passito DOC Austo shows a deep ruby color that fades toward garnet tones, inviting a dense, enveloping sip. On the nose ripe red fruits and plum jam emerge, supported by notes of brandied cherry, hints of sweet spice and a delicate honeyed vein. The palate is soft yet sapid, the sweetness well balanced by a lively freshness that keeps the wine polished; the tannic texture, present but gentle, contributes to a pleasant persistence without weighing it down. The concentration is noticeable but the mouthfeel remains fluid and measured, making it enjoyable even over repeated sips.

Suitable for moments of contemplation or as a companion to desserts based on dark chocolate and fruit tarts, it also pairs well with aged and semi-aged cheeses. Serve slightly chilled, at around 12–14 °C, in wide glasses that allow the aromatic profile to breathe; also ideal as an after-meal meditation wine, it offers a sweet-acid balance that makes it versatile by the glass. Winery history
The Sutto Family has a winemaking tradition dating back to 1933, passed down through three generations. From the management of the vineyards at Campo di Pietra, several businesses and brands have developed — Sutto, Batìso for Prosecco and Polje for Collio — along with hospitality and restaurant activities.
