The harvest of this Rosso di Montalcino begins with a careful manual selection of the bunches before destemming, followed by the selection of the grapes with an optical selector. The fermentation is spontaneous, without the addition of yeasts, and the maceration is accompanied by frequent punching down. This process takes place in steel vats, in which a controlled temperature is maintained for 18 days.
The wine visually presents itself with a lively and intense red color. As for the scent, aromas of berries emerge, with clear notes of cherry and raspberry. In the mouth, the wine reveals itself to be seductive, rich and full. The finish is savory and balanced, supported by an acidity that suggests long aging potential.
It goes beautifully with Tuscan cured meats, meat and grilled dishes, medium-aged cheeses, and tagliatelle with mushrooms.
