On the palate it displays roundness and structure: medium-full body, a balance between sugary softness and a spicy kick, subtle tannins and a persistence that invites a second sip. It is suitable to be enjoyed neat or with ice, but also holds up well in cocktails that require character. It pairs nicely with dark chocolate, caramel-based desserts and aged cheeses; serving temperature around 18–20°C to capture all the nuances.

Distillation

Ageing
Maturation in American white oak ex-bourbon casks; some expressions are blends of different ages and finished in ex-Cognac or ex-Sherry casks for certain selections (e.g., XO).
