On the palate the structure is solid: the alcoholic warmth is present but well calibrated against the persistence, providing body and tension. The sip is dry, saline and leaves a long trail of bitter citrus and light spices; a few drops of water or some ice temper the strength without losing expressiveness. It is an ideal companion for mixology when you want clean, structured cocktails, but it also holds up well to considered tastings paired with seafood, citrus or fresh cheeses.
