Winery history
The family-run estate operates at the Schambachhof in Bötzingen; the Höfflin family has farmed organically for generations, and the website states that the Bioland approach has been practiced on the property for decades. Matthias Höfflin started the current business in the 1980s, and today management involves the next generation with Julius Höfflin.
Production philosophy
Priority is given to soil vitality and biodiversity: organic and agroforestry practices, spontaneous fermentations, extended aging on the lees, careful tannin management, reduced or no addition of sulfites, and unfiltered bottling to produce wines expressive of the terroir.
