Eden Mill Single Malt in a 70cl bottle, matured in a sherry cask, surprises with its warm, immediate profile. In the glass dried fruit and plum emerge, with hints of candied orange and a dark-chocolate note that intertwines with vanilla and sweet spices; the oak contributes without overpowering, offering a coherent and pleasant aromatic texture. The palate is rounded and clean, with good definition of the components and a sense of warmth that is never excessive. The structure is full but balanced, with soft tannins that lead to a persistent, slightly almondy finish.

Ideal enjoyed neat or with a few drops of water to open up the aromas, it also pairs well with dark chocolate, desserts based on dried fruit, or aged cheeses. Distillation

Copper pot still distillation with plant including a gin still, wash and spirit stills; 'grain-to-glass' process for single malt whisky and botanical distillation for the gins. The new plant was installed with copper stills and equipment for mashing/fermentation.

Ageing

Maturation in oak casks using different types of barrels depending on the expression: ex-bourbon, ex-sherry (Oloroso, PX), Scottish oak casks and finishes in selected casks for some limited editions.
