Elegant and dry, this Spumante Alta Langa Blanc de Noir Colombo shows a very fine perlage and an aromatic profile that shifts between subtle red fruits and light biscuity notes. On the nose it is frank and composed; the acidic drive keeps the drink lively without being aggressive, while the mid-palate offers a pleasant roundness supported by a delicate sapidity. A subtle mineral tension helps make the sip more linear; the finish is clean and persistent, with a balance that invites a second glass.

Versatile at the table, it enhances aperitifs, seafood starters and shellfish, but also stands up to more flavorful fish dishes and fresh cheeses; it also pairs well with quality fried foods. Serve chilled, ideally in a flute or tulip glass to preserve the bubbles, between 6 and 8 °C. Uncork just before serving and let it breathe for a few moments to bring out the aromas. It is also well suited to festive occasions or as a gift for those who appreciate sparkling wines with personality.

Winery history
A family project launched in the early 2000s, with the Colombo family restoring and enhancing historic vineyards in Val Bormida. The venture developed by recovering old vines and focusing on the production of sparkling wines and local Pinot Noir.
