Elegant and essential, Rapalino’s Alta Langa Pas Dosé reveals a vibrant dryness and a pronounced sapidity that define its character. The perlage is fine and continuous, the taut acidity carries the sip with grace, while the nose opens with notes of citrus, green apple and white flowers; a subtle bread-crust note adds depth without forcing complexity. The Pas Dosé accentuates the aromatic transparency, leaving a fresh, clean persistence that invites another sip.

Perfect as a precise aperitif, it also shows good versatility at the table: raw seafood, oysters and shellfish highlight its salinity, while light fried dishes and fresh cheeses provide a pleasant contrast. Serve very cold, around 6–8 °C, to showcase its backbone and the finesse of the bubbles; it’s the ideal choice when seeking a dry, restrained sparkle capable of refreshing the palate without overpowering it.
