Refined in color, it shows a luminous powder-pink and a fine, persistent perlage that caresses the glass. On the nose it opens with delicate red fruits and rose petals, followed by citrus hints and a slight yeasty note that gives depth without being intrusive. The palate is lean yet substantial: the acidity is lively, the texture creamy thanks to the integrated bubbles, while a discreet salinity supports the body and prolongs the drinking experience. The finish remains fresh and of good persistence, with fruity echoes and a light biscuity note that invites another sip.

It presents as elegant and well-balanced, ideal for an aperitif but capable of standing up to more structured pairings such as raw seafood, smoked salmon or fresh cheeses. Serve chilled, around 6–8 °C, in a flute to showcase the mousse or in a wide glass if greater expressiveness is desired. A versatile choice for convivial moments, where the restraint and finesse of the Traditional Method meet the pleasure of a modern, immediate Brut rosé.

Winery history
Founded by business and life partners Elizabeth Pressler and Spencer Graham, Elizabeth Spencer released its first label in 1998. In 2006 the winery moved its operations into the historic 1872 brick post office building in Rutherford, converting it into a tasting room and an inviting garden. In 2021 Elizabeth Spencer joined the Boisset Collection, maintaining its winemaking identity under new ownership.
