Vollì presents a fine, continuous perlage that invites the first sip: the color is bright straw and the aroma profile recalls white-fleshed fruit and delicate white flowers, with a citrus note that adds freshness.

On the palate the impact is balanced between an enveloping softness and a lively acidity; the slight sweetness typical of Extra Dry is well measured and does not overpower the wine’s cleanliness, leaving a sensation of easy-drinking that is quick but pleasant. The body is lean without being insubstantial, suited to those who seek a sparkling wine with personality but not overly austere. It works well as an aperitif but shows versatility at the table: it accompanies finger food, not-too-fatty fish preparations, shellfish and fresh cheeses; it also stands up to pairings with lightly spiced dishes and simple desserts. Winery history
Founded in 1883 in Soave by the Bolla family, the winery expanded over the following decades, extending production from Soave white wines to the great reds of Valpolicella. Over time the brand has become an international reference for wines from Veneto. The winery joined Gruppo Italiano Vini in the 2000s.
