This Ribolla Gialla sparkling wine shows a pale straw-yellow color with fine, persistent perlage. On the nose it offers an elegant profile of fresh citrus, green apple and delicate wildflower notes, with a pleasant slightly mineral hint that underlines its tension. You can also perceive a light herbaceous touch and a suggestion of bread crust, which enrich the aromatic profile, adding complexity without weighing it down. The Brut dosage leaves room for a lively acidity that keeps the sip fresh and lifted, delivering a dry, well-balanced profile.

On the palate it is lean but well-defined: the bubbles support a fresh structure, characterized by pleasant salinity and a flavorful, dry finish. The creamy sensation from the fine bubbles makes it enjoyable in the mouth, with a persistence that invites a second glass, and it is suitable both as an aperitif and paired with delicate seafood dishes, crudités and fresh cheeses; it also pairs well with vegetable dishes, oven-baked fish or Asian-inspired fish preparations. Serve chilled, around 6–8 °C, in tulip glasses to appreciate its aroma and persistence.
