The Spumante Spergola Emilia IGT Pas Dosé "Stellato" from Albinea Canali offers a dry, composed profile based on the namesake grape. On the nose there are notes of white-fleshed fruit, citrus peel and light floral hints, while the palate shows freshness and a texture of fine bubbles that supports the structure without sweetening. The absence of added dosage keeps the wine on essential tones and allows the raw material to emerge clearly. The color is generally straw with bright reflections and the finish remains dry and saline.

It is a versatile expression, suitable for seafood aperitifs, small shellfish, light antipasti and fresh cheeses. It is recommended to serve it well chilled, around 6–8 °C, in not too large glasses to preserve the liveliness of the bubbles. Drink relatively young to appreciate its immediate sapidity and liveliness; a brief aeration in the bottle is not necessary. Suitable for those seeking a dry, linear sparkling wine with a discreet gastronomic profile.
