An impenetrable red with violet highlights, this Negroamaro expresses Mediterranean character without mincing words. In the glass it appears dense and compact, with aromas of ripe dark fruit — black cherry and plum — accompanied by a subtle underpinning of aromatic herbs and black pepper. The substance is well defined: fresh enough to keep the palate lively, with a tannic texture that is present but never intrusive. Overall it is straightforward and solid, with that rustic touch that makes it immediately recognizable.

The sip confirms a focused structure, warm yet measured, and a savory finish that invites the next bite. It’s a wine that finds natural company with grilled meats, lamb, flavorful tomato sauces, hearty pizza and semi-aged cheeses; it also stands up well to spicy dishes and the traditional cuisine of Salento. A light aeration softens the tannins and releases the aromas: serve at around 16-18 °C to appreciate its natural balance and persistence.
