On the palate it fulfills that promise: the sip is frank, with good roundness and a tension that supports its progression, leaving a pleasant, dry persistence. The sensation is balanced, with controlled warmth and a discernible clean finish; it lends itself both to contemplative end-of-meal sipping and to small pairings with dark chocolate or blue cheeses. Its versatility makes it suitable for a meditative tasting or for a small glass shared after dinner. Recommended to serve in a narrow glass, at room temperature or slightly cool, to fully appreciate its delicate variations.

Distillation
Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
