The Valpolicella Ripasso Classico Magnum from Cantina Clementi embodies the essence of Veneto's winemaking art, condensed into a generously sized bottle that promises to be the star of any table. The "Ripasso" procedure, unique to this region, involves a second fermentation of the wine on Amarone pomace, imparting extraordinary complexity and unmatched aromatic richness to this wine.

In terms of color, Clementi's Valpolicella Ripasso presents a deep ruby red that hints at its intense and persistent aromas. On the nose, notes of ripe red fruits, such as cherry and plum, are revealed, enriched by spicy nuances of vanilla and black pepper, thanks to a slight passage in wooden barrels that refines the bouquet without overpowering it.

On the palate, the wine is truly robust and structured, yet maintains a freshness that invites the next sip. The balance between acidity and tannins is very well managed, resulting in a long and pleasantly bitter finish, typical of Ripasso. The fruity notes blend perfectly with the spicy ones, creating a complex yet harmonious tasting experience.

This Magnum of Valpolicella Ripasso is ideal for accompanying intense meat dishes, such as braised or stewed meats, but it can also be a magnificent companion for an evening of aged cheeses and cured meats. It is recommended to serve it at a temperature of 18°C to enhance all its qualities.

Winery history
The business began with Pietro Clementi’s interest in viticulture. A lawyer from Verona, he purchased the property in Gnirega in 1969 and began making wine in a small home cellar. For years production was intended for family, friends and local events. In 2002 the winery was renovated to serve the national and international markets. Today management has passed to the second generation.
Production philosophy
Family-run production focused on respecting the land and Valpolicella’s traditional practices. The family is a member of the Federazione Italiana Vignaioli Indipendenti and of the Sistema di Qualità Nazionale per la Produzione Integrata, prioritizing on-site processing, hand harvesting and agronomic practices with reduced environmental impact.
Terroir and vineyards
Located in the Valpolicella Classica, the vineyards are southwest-facing on terraced hills with calcareous and clay soils. They sit at an altitude of 300 to 400 meters in a temperate, sheltered microclimate protected by the Monti Lessini.
