The production of Valpolicella Ripasso involves a second fermentation process together with the pomace of the prestigious Amarone, a method that reflects the very essence of this wine: richness and depth. On the nose, it offers an intense bouquet distinguished by notes of ripe red fruits, such as cherries and plums, enriched by spicy nuances of vanilla and black pepper, evidence of elegant maturation in barriques.

On the palate, Valpolicella Ripasso DOC reveals a robust yet velvety structure. The harmony between its lively acidity and well-integrated tannins provides the backdrop for a persistent flavor that recalls the same aromatic sensations of ripe fruit and spices, with a finish that surprises with its remarkable length.

Ideal with hearty dishes such as roasted red meats, game, and aged cheeses, this wine is also perfect for moments of contemplation. Its complexity and extraordinary ability to evolve over time make it an ideal candidate for aging, promising to reveal new nuances year after year.

Serve at approximately 16–18°C to fully appreciate its richness and complexity. A true gem of Veneto winemaking, Ripa della Volta’s Valpolicella Ripasso DOC is a wine that celebrates Italian excellence and winemaking tradition.
