Distillation
Double distillation in copper pot stills with shell‑and‑tube condensers (externally positioned), combined use of wooden and stainless steel washbacks; new make cut at around 75% ABV and reduced with local water before filling into casks.
Ageing
Maturation in dunnage warehouses at the distillery, close to the coast; use of a mix of cask types to achieve different profiles; many releases are non‑chill‑filtered and of natural colour.
