Coastal peat and salinity, here mellowed by eleven years of maturation. The Tequila Finish adds an original texture without overturning the island’s identity, with notes recalling cooked agave, lime zest and a light aromatic herb; vanilla and a hint of spice give depth while keeping the sip lean and lively. The balance between freshness and smokiness makes the drinking experience interesting and not heavy.

On the palate the body is medium, with saline returns and a finish that alternates gentle smoke and citrus echoes; the vegetal component from the finish invites another taste. Bottled in Douglas Laing’s Old Particular series and presented in a case, it’s suitable both for slow neat tasting and for small food pairings: think smoked fish tapas, well-spiced ceviche or dishes with citrus that emphasize its freshness. Serve at room temperature or slightly chilled to appreciate its complexity.
