On the palate Conclave shows a gentle roundness and a medium-toned structure: the alcoholic warmth is well measured and the clean finish promotes a pleasant persistence. It's easy to drink, ideal both as a small contemplative moment after a meal and as an accompaniment to dark chocolate, aged cheeses or small caramel-based treats; a few drops of water open up its aromas without flattening them.

Artisanal distillation with discontinuous water-bath stills (copper boilers) for grappas and distillates; a vacuum water-bath still (Crysopea) is used for some gin references.
Ageing
Aging in casks/barrique; specific examples include whisky aged in white oak casks for 5 years (e.g. Conclave) and products using barrique/solera systems for some aged grappas.
