Young but surprisingly composed, this 5-year Single Cask from the Isle of Raasay is unpeated and carries the energy typical of a short maturation. On the nose it opens with notes of green apple and ripe pear, lemon zest and a hint of wildflowers, accompanied by a light background of vanilla; the character is clean, direct and supported by the concentration typical of cask strength, which gives warmth and definition to the palate. The structure is lean but present, with a fresh cereal sensation that keeps everything well balanced and a finish that stays bright rather than smoky.

Best enjoyed neat or with a drop of water to open the aromatic nuances; the alcoholic heat should be dosed carefully so as not to overpower the finesse of the profile. At the table it pairs well with dry pastries, nuts and dark chocolate, but also holds up with light savory pairings like seafood salads or soft cheeses; it’s an informal but carefully made bottle, ideal for those seeking a young, clear and gentle single cask.
