Distillation and production

Production method

Production is entrusted to the Tequileña distillery (NOM 1146). Blanco expressions are described as unaged and obtained from 100% Blue Weber agave. Technical sources report predominant use of column distillation supplemented by small percentages of pot still distillate for greater body; a proprietary technique of crushing the piñas without adding water is reported for the Blanco. The product is normally bottled at 40% ABV.

Distillation

Mainly column distillation with integration of a share of pot still distillate for greater structure; double distillation. For the Blanco a technique of crushing the piñas without adding water is reported (as described in distributor technical sheets).

Ageing

Blanco: unaged. Reposado: finished in casks for a few months (commercial sources indicate about 4–6 months in uncharred American white oak).

Producer history Cimarron

Cimarrón is marketed as a brand connected to the production of the Tequileña distillery (NOM 1146) and to master distiller Enrique Fonseca, a figure frequently mentioned in product sheets and distribution materials. Distributor sources and product sheets indicate the brand has been on the market since the 1990s, but no independent official brand website reporting a formal foundation date was found.

Production philosophy

To showcase the agave of the Jalisco highlands by offering a frank, dry organoleptic profile, with products declared as 100% Blue Weber agave and formulated without added additives, delivering good value for money suitable both for mixing and casual tasting.
