Artisanal production with a discontinuous distillation cycle: small batches of pomace are distilled using a low-pressure, low-temperature direct-steam system in copper boilers. Grappa is first rested in inert containers (steel/glass) and, for aged versions, subsequently matured in wooden vessels.
