Distillation and production

Production method

Produced from 100% Blue Weber Agave; hand harvesting by jimadores using the coa; piñas slow‑cooked in clay ovens for about 26 hours; extraction with a modern molino; natural fermentation with indigenous wild yeasts present on site; double distillation and clarification to remove heads and tails; aging in American white oak barrels and bottling on site.

Distillation

Double distillation; clarification to separate heads and tails; natural fermentation with indigenous wild yeasts.

Ageing

Maturation in charred American white oak barrels, with aging times that exceed category standards (e.g. Reposado 11 months, Añejo ~25 months; extra‑añejo selections aged longer).

Producer history Herradura Distillery

Production on the Casa Herradura site dates back to the 19th century and the modern brand is attested from 1870. During the 20th century the name “Herradura” (horseshoe) became the company’s recognizable trademark; the distillery introduced important category innovations (including commercializing reposado and creating the extra‑añejo category with Selección Suprema). In January 2007 most Casa Herradura assets were acquired by the US group Brown‑Forman, which kept production at the historic Amatitán facilities.

Production philosophy

Balance between tradition and innovation: respect for established artisanal practices (hand harvesting, slow cooking of piñas, season‑based cultivation) combined with modern quality control, extended aging and commitment to environmental sustainability and recycling of production processes.

Territory

Hacienda San José del Refugio, Amatitán, Valle del Tequila (Jalisco) — volcanic/lowlands area for Blue Weber agave production.

Awards and recognitions

Environmental recognitions (multiple 'Green Company' certifications from the Mexican Ministry of Environment and an Environmental Excellence Award from environmental authorities); industry acknowledgements such as mentions as "Best Distillery" in specialized publications (e.g. citation in 2007).
