Distillation and production

Production method

Distillation starts from a cereal mash (corn, rye and barley malt) mixed with iron-free spring water from the Cave Spring. After fermentation and distillation, the spirit is slowly filtered through maple charcoal (charcoal mellowing, known as the Lincoln County Process) before being placed in new charred American white oak barrels for maturation in the site's rickhouses.

Ageing

Ageing in new charred American white oak barrels, stored in multi-level rickhouses; temperature and humidity conditions are left to natural seasonal variation to affect extraction from the wood.

Producer history Jack Daniel's

The original distillery was registered by Jasper Newton "Jack" Daniel in 1866; the site and production have remained tied to Lynchburg (Cave Spring Hollow). Jack Daniel's is recognised as the first registered distillery in the United States and is listed on the National Register of Historic Places. In 1956 the brand and distillery came under the ownership of the Brown‑Forman group, which subsequently managed its commercial expansion and investments at the historic site.

Production philosophy

Preserve traditional methods and product consistency: produce exclusively in Lynchburg, prioritise local ingredients (Cave Spring water, cereals) and established artisanal processes (charcoal mellowing, ageing in new charred barrels) to guarantee the distinctive organoleptic profile of Jack Daniel's expressions.

Territory

Lynchburg, Moore County, Tennessee, United States. All official Jack Daniel's production is carried out at the historic Lynchburg site.
