Distillation and production

Production method

Recipe developed in collaboration with the Diageo team: the base is obtained from grain alcohol and a component of distilled Junmai sake. The recipe uses traditional copper pot stills for the distilled portion, followed by integration of the sake distillate and dilution to bottling strength (41.3% ABV).

The Jinzu concept originated from Diageo's 'Show Your Spirit' project: the spirit was created by British bartender Dee Davies, winner of the competition in 2013. After development at Diageo's innovation centers, Jinzu was commercially launched in 2014 and added to the group's portfolio, with production entrusted to Diageo's facilities in Scotland.
