Selection of low‑alcohol wines, double distillation in copper stills (Charentais pot still) exclusively from 'clear' wines (without lees), maturation in fine‑grained French oak casks and cellar finishing; subsequent blending of the eaux-de-vie by the maître de chai. Some expressions are finished in bourbon casks.
